    Recipe: Saffron Lassi (India)

    Saffron Makhania Lassi is typically served in Jodhpur – sometimes in other parts of Rajahstan. It is very rich and deliciously creamy. If you want to serve your guests something special – you won’t disappoint with this sweet indulgence!


    What you need


    Serves 5

    • 1/2 cup of hot milk
    • 1/4 g saffron
    • 1 l of plain yoghurt
    • 200g sugar
    • 1 Tbsp green cardamom powder
    • 150g of nuts (mix of: cashew nuts, raisins, almonds)
    • 150g fresh double cream
    • optional: 100g of unsalted butter




    Heat up the milk and add the saffron. Cook for 15-20 minutes. In a separate bowl, add the yoghurt. Mix the sugar and cardamom into the yoghurt – stir & add the saffron milk while stirring continuously until the yoghurt is very soft in consistency. In a separate bowl mix the nut mix with the double cream. Now mix the nuts into the yoghurt mixture – mix together. Optionally, mix in some butter. Then chill in the fridge for a at least 1 hour.
