Recipe: Rajasthani Rabodi (India)

The original recipe requires real Rabodi (boiled yoghurt cooked for hours, left to dry in the sun for hours). See if you can find any in specialty stores. If you can’t source any, cut Lasagne sheets into long pieces of about 5cm in width, soak it in hot water for a while (until soft) and use this instead. It essentially tastes the same – so you won’t miss out on not having Rabodi in the recipe.

 

What you need

 

  • A wok-type pan
  • 5 Lasagne sheets or Rabodi
  • 1 Tbsp Olive oil (or ghee)
  • 1 big pot Dry (thick) Yoghurt
  • 1 Tbsp Cornflour
  • 2 Onions
  • Salt (as per your taste)
  • 2-3 teaspoons Cumin Seeds
  • 1-2  teaspoons Chilli Powder
  • 2-3 teaspoons Turmeric

 

Preparation

 

Chop up the onions in small chunks. Heat up the oil in the pan. Throw in a few cumin seeds to test the temperature – when they start sizzling, the oil is ready. Fry the onions until golden. Add the rest of the Cumin seeds & the salt. Add the Cornflour and mix thoroughly. Reduce the heat. Add the pot of yoghurt. Mix well. Add the Chilli Powder & Turmeric. Simmer, mixing all ingredients. If the sauce becomes too thick, add water to make it a curry-like consistency. Not too thick – not too watery. Finally, add the ‘Rabodi’ and let it simmer for 15min stirring regularly to make sure the Rabodi does not burn to the pan.
