This recipe was passed on to me by a Chai Wallah in Kathmandu, Nepal. Preparing Masala Chai is an Art in itself. But once you get the hang of it, it’s very easy to do! And oh so delicious!
How to make Masala Spice Mixture
You can prepare enough to last you for a while – simply buy a jar (or use an old Jam jar) add the ingredients, stir well (you can also give it a bit of a shake) and keep it stored with your other spices!
- 1 Tbsp cinnamon
- 1 Tbsp cardamom
- 1 Tbsp ginger
- 1/2 Tbsp whole cloves
- 1/2 Tbsp black pepper
How to make Masala Chai
- 1 cup water
- 1 cup milk
- 2 heaped tsp loose strong black tea (Darjeeling, Assam or alternatively PG Tips etc.)
- 2 tsp brown sugar (or honey)
- ½ tsp chai mixture (recipe above)
- fresh ginger
Use double the amount of tea per water – meaning, if you use one cup of water, use 2 heaped teaspoons of tea. Two cups of water, 4 teaspoons of tea etc.
Heat the water and place the loose tea in it. Boil for 1min – now add ½ teaspoon chai mixture. Add the fresh ginger (unless you used dry ginger in your chai spice mixture). Bring to the boil and stir. Pour one cup of milk into the mixture. Now add 2 teaspoons of sugar and boil for a while longer. Whisk it for a while. Turn off the heat and let it stand for a minute. Now, pour into the mesh strainer into the pot and drink hot!
