Recipe: Lao Lap

Recipe: Lao Larb (Spicy Chicken Salad)

Laos was the only country I visited so far in which I struggled to find a variety of recipes. This is because there aren’t too many traditional dishes in Laos. This yummy summer salad is perfect for those really hot days. You can either use minced chicken or beef.


What you need


Serves 2-3.

500g minced chicken or beef
1-2 spring onions, finely chopped
1-2 shallots, finely chopped
a handful of fresh mint leaves, finely chopped
3 tbsps khao koor (roasted rice powder)
2 tbsps Thai chili powder (alternatively chop some fresh chillies)
juice of 1 fresh lime
2-3 tbsps fish sauce

Jasmine or Sticky Rice.

Fresh coriander leaves & parsley to garnish.




Cook the chicken with some of the lime juice over moderate heat. Stir regularly. Put the chicken into a serving bowl. Add the rest of the ingredients listed above. Taste to season. Serve with Sticky or Jasmine Rice. Ususually you tear a bit of sticky rice with your hands, mix it with the lap and eat it that way, bit by bit.
